Brewing Gunpowder Tea: A Straightforward Guide

Gunpowder is one of the easiest green teas to brew well. Its tightly rolled pellets are more forgiving than delicate loose-leaf greens, and its bold flavor holds up even if your timing or temperature is slightly off. This makes it an excellent starting point for anyone new to green tea.

What You Need

A standard teapot, mug with infuser, or gaiwan will all work well. Use 3 grams of gunpowder pellets (roughly 1.5 teaspoons) per 200 ml of water. Note that gunpowder pellets are dense — they expand to several times their dry volume once they unfurl, so resist the temptation to heap the spoon.

Step 1: Heat Your Water

Bring fresh water to a boil and let it cool to approximately 80°C (176°F). Gunpowder is more tolerant of heat than many greens, but water above 85°C will pull excess bitterness from the leaves and overpower the tea's natural sweetness.

Step 2: Steep

Place the pellets in your vessel and pour the heated water over them. Steep for 2 minutes. You will see the pellets slowly swell and unfurl — this is part of the pleasure of brewing gunpowder. When most pellets have opened fully, the tea is ready.

Step 3: Strain and Serve

Remove the leaves or pour the liquor into a separate vessel. The brewed tea should be a deep golden-green with a slightly smoky aroma.

Step 4: Resteep

Gunpowder handles resteeping well. For the second infusion, steep for 2.5 minutes at the same temperature. A third infusion at 3 minutes is still rewarding, though the smokiness will mellow and sweeter, lighter notes will emerge.

Moroccan Mint Tea Variation

To prepare traditional Moroccan mint tea, use a slightly higher dose of gunpowder — about 4 grams — and brew it in a small teapot. After the first steep, add a generous handful of fresh spearmint leaves and 2 to 3 teaspoons of sugar. Pour a glass, then return it to the pot (this is called "marrying the tea"). Repeat two or three times to mix everything thoroughly. Finally, pour from a height of 30 centimeters or more to aerate the tea and produce a light froth.

Common Mistakes

The most common error is using too much leaf. Because the pellets look small, it is easy to double the intended dose, resulting in an overpoweringly bitter cup. Start with 1.5 teaspoons and adjust to taste. Over-steeping beyond 3 minutes on the first infusion will also produce excessive astringency. Finally, avoid using freshly boiled water — the brief cooling period to 80°C makes a noticeable difference in smoothness.
