Types of Tea Explained: How One Plant Becomes Six Categories

Stand in front of a well-stocked tea shelf and it looks like a collection of different plants. A tin of silver-white downy buds next to flat jade-green needles, next to tightly rolled dark pellets, next to a compressed brick that looks more like firewood than a beverage. Different colors, different smells, wildly different prices.

Almost all of it is the same species. White tea, green tea, yellow tea, oolong, black tea, and dark tea are all Camellia sinensis, and the differences between them were created after the leaf was picked. Nothing was added. The category is not a variety of plant, it is a decision about processing, and the central decision is how much oxidation the leaf is allowed to undergo before that process is stopped.

Once that clicks, the whole shelf reorganizes itself. You stop memorizing brewing instructions tea by tea and start reading them off the category, because the same physics governs every leaf in it. This guide covers the plant, the chemistry, and the six categories in the order of how much a producer intervenes, then turns it into a practical map for your kettle.

One Plant, Two Main Varieties

Every true tea comes from Camellia sinensis, an evergreen shrub in the same genus as garden camellias. Two varieties account for nearly all commercial production.

Var. sinensis is the small-leaf Chinese variety. It tolerates cold, grows slowly at altitude, and yields a leaf with more delicate aromatics and generally lower caffeine. Most Chinese and Japanese green teas, most oolong, and high-grown teas like Darjeeling come from it.

Var. assamica is the large-leaf variety native to Assam and southern Yunnan. It thrives in tropical lowland heat, grows vigorously, and produces a leaf richer in polyphenols and caffeine. It gives you Assam, most African black tea, and the raw material for pu-erh.

Beyond the variety sits cultivar, elevation, soil, weather, and picking standard, all of which matter enormously to the final cup. But none of them determine the category. A single garden can pick one flush of leaves and turn it into green tea, black tea, or white tea depending entirely on what happens in the next twenty-four hours.

Everything else on the tea shelf, chamomile, peppermint, rooibos, hibiscus, barley tea, is not tea in this sense. Those are tisanes: infusions of other plants brewed the same way, with their own brewing rules and no caffeine to speak of.

Oxidation Is Not Fermentation

Here is the single most useful piece of tea chemistry, and the one most often described incorrectly.

When a tea leaf is bruised or torn, cell walls rupture and an enzyme called polyphenol oxidase meets the catechins stored inside, with oxygen from the air as the third ingredient. The catechins begin converting into larger molecules: theaflavins first, which are bright orange and brisk, then thearubigins, which are darker, softer, and responsible for the deep coppery color and malty body of a fully oxidized tea.

It is the same reaction you see in a cut apple going brown on the counter. It is enzymatic browning, and it starts within minutes of picking.

Tea producers do exactly two things with this reaction: they let it run for a while, and then they stop it. Stopping it means heat, because the enzyme denatures at high temperature. In Chinese processing this step is shaqing (杀青), literally "kill green," done by tumbling leaves in a hot wok. Japanese producers steam the leaf instead, usually for fifteen to forty-five seconds, which is why Japanese greens taste vegetal and marine while Chinese greens taste nutty and toasted. Same purpose, different flavor consequence.

You will still see oxidation called "fermentation" on packaging and in older books. It is a mistranslation that stuck. Fermentation means microbes, and only one of the six categories actually involves them, which is where we end up at the bottom of this list.

The Six Categories

Ordered by how much the producer intervenes, from least to most.

White Tea: Withered and Dried

The minimum viable process. Leaves are picked, laid out to wither, and dried. There is no rolling and no kill-green step, which means white tea is not truly unoxidized: over a long slow wither, some oxidation happens quietly on its own, typically in the range of five to ten percent. The category is defined by restraint rather than by a number.

Because so little is done to it, the raw material has nowhere to hide. Silver Needle is made from unopened buds alone and tastes of hay, melon, and honey. White Peony adds the first leaves and gains body. Shou Mei, made from later and larger leaves, is browner, sturdier, and ages well. Our complete white tea guide covers the grades in detail.

One correction worth making early: white tea is widely assumed to be the lowest-caffeine true tea, and it is not. Buds are where the plant concentrates caffeine, so a bud-only white can carry more than a robust black tea.

Green Tea: Oxidation Stopped Immediately

Green tea is the leaf caught before the reaction gets going. Within hours of picking, it is steamed or pan-fired to kill the enzyme, then rolled and dried. What survives is the fresh chemistry of the living leaf: chlorophyll, amino acids, and a full complement of catechins, EGCG among them.

Because those catechins are intact and dissolve aggressively in hot water, green tea is the category most easily ruined. Boiling water pulls bitterness out in seconds. Around 70 to 80°C (158 to 175°F) for one to three minutes is the working range for most of it, and shade-grown gyokuro goes lower still, down to 50 to 60°C (122 to 140°F), to favor sweet amino acids over astringent catechins. Matcha is a special case within the category: the whole leaf is stone-ground and whisked into suspension rather than infused, so you consume the leaf itself rather than an extract of it.

Yellow Tea: Green Tea With a Pause

The rarest and least understood of the six, and the one most people have never knowingly tasted. Yellow tea starts like green tea, with a kill-green step, but adds a stage called men huang (闷黄), or "sealed yellowing." The still-warm, still-damp leaves are wrapped in cloth or paper and left to rest, sometimes repeatedly over one to three days.

With the enzyme already dead, this is not oxidation. It is slow non-enzymatic browning and moisture redistribution, and it does something specific: it strips out the grassy edge of green tea and leaves a rounder, sweeter, mellower cup with no astringency to fight.

It is labor-intensive, easy to get wrong, and hard to sell at a premium to buyers who do not know the category exists, so production nearly disappeared during the twentieth century. Junshan Yinzhen and Meng Ding Huang Ya are the classic examples. Brew it like a gentle green, around 75 to 80°C (167 to 176°F).

Oolong: Oxidation Held Partway

Oolong is the category where a producer stops trying to control the reaction and starts steering it. Withered leaves are shaken or tumbled so the edges bruise while the centers stay intact, which starts oxidation at the rim and lets it creep inward. The leaf rests, gets shaken again, rests again. When the target is reached, heat stops it.

That target spans an enormous range, roughly fifteen to eighty-five percent, which is why "oolong" describes a spectrum rather than a flavor. Lightly oxidized, tightly rolled Tieguanyin is floral, buttery, and closer to a green tea in character. Heavily oxidized and roasted Da Hong Pao is dark, mineral, and closer to a black. Oriental Beauty sits near the top of the range and tastes of stone fruit and honey.

Oolong is also the category that rewards multiple short infusions more than any other, because the rolled leaf unfurls gradually and releases something different each time. Black Tea: Fully Oxidized

The leaf is withered to reduce moisture, rolled hard to rupture as many cells as possible, then left to oxidize completely under controlled humidity before firing. Nearly all the catechins convert into theaflavins and thearubigins, which is what produces the copper liquor, the malty depth, and the tolerance for milk that green tea does not have.

Note that China calls this category hong cha, "red tea," after the color of the liquor rather than the leaf. Western usage names it for the leaf. Same tea, and worth knowing when you read a Chinese label.

There are two production styles and the difference is significant. Orthodox processing keeps the leaf reasonably whole and produces the graded teas you buy loose, brewed at 95 to 100°C (203 to 212°F) for three to five minutes. CTC, for crush-tear-curl, runs the leaf through toothed rollers into uniform granules with enormous surface area. CTC extracts hard and fast, which is exactly what you want inside a tea bag or in a pot of masala chai that has to survive milk, sugar, and spice. Dark Tea: Actually Fermented

Dark tea, hei cha, is the only category where microbes genuinely do the work. After a kill-green step, the leaves are piled damp and left to a controlled microbial process involving fungi and bacteria that breaks down bitterness and builds earthy, woody, sometimes sweet depth. This is fermentation in the real sense.

Pu-erh is the famous example and splits in two. Sheng (raw) pu-erh is pressed young and left to transform slowly over years or decades, which is why vintages are collected and traded. Shou (ripe) pu-erh goes through wo dui, a wet-piling technique commercialized in the early 1970s to compress decades of aging into roughly forty-five to sixty days. Other dark teas include Liu Bao and the Fu brick teas of Hunan, deliberately cultured with Eurotium cristatum, the golden specks known as "golden flowers."

Dark tea takes full boiling water, usually with a quick rinse first to wake the compressed leaf and wash off storage dust, then short repeated infusions.

The Categories Are Not a Strength Ladder

The most common misreading of this system is treating it as a scale from weak to strong, with white at the mild end and black at the powerful end. Two things fall out of that assumption, and both are wrong.

Oxidation does not create or destroy caffeine. The reaction acts on catechins, not on caffeine, which is essentially unchanged by processing. Caffeine content is set in the field, by variety, by how young the picked material is, and by how much of it is bud rather than mature leaf. A delicate bud-only white can out-caffeinate a bold black, and the strongest predictor of the caffeine in your cup is not the category at all but how you brew: time, temperature, and leaf quantity.

"Light" flavor does not mean fragile chemistry. Green tea tastes gentler than black tea while containing far more free catechins, which is precisely why it turns bitter so fast. Black tea tastes stronger while being chemically more settled, which is why it tolerates boiling water and a five-minute steep that would destroy a sencha.

The categories describe what was done to the leaf. They do not rank it.

Reading the Shelf: A Brewing Map

The practical payoff is that once you can place a tea in its category, you already know most of what your kettle needs to do. Rough working ranges for Western-style brewing, one teaspoon per cup:

The pattern is not arbitrary. It tracks oxidation directly. The less oxidized the leaf, the more intact catechins it holds, the more readily those catechins dissolve into bitterness, and the more cautious you have to be with heat and time. Fully oxidized and fermented teas have already spent that chemistry during processing and can take everything a kettle can give them. That relationship is the whole reason temperature matters and why the science of steeping is worth understanding once rather than guessing at forever.

Treat the table as a starting point rather than a rule. Within any category, a roasted hojicha wants hotter water than a shaded gyokuro, and an aged Shou Mei wants hotter water than a fresh Silver Needle. But you will be close on the first try, which is a much better place to begin than the back of the packet.

Six categories, one plant, and a single organizing idea. White tea is withered and dried, green tea has its oxidation stopped immediately, yellow tea adds a sealed yellowing rest, oolong is halted somewhere in the middle of a wide range, black tea is taken all the way, and dark tea is genuinely fermented by microbes afterward.
