Grown at elevations between 1,000 and 1,800 meters on the slopes of Ali Shan (Mount Ali) in Chiayi County, this tea belongs to the prestigious category of gaoshan cha — literally "high-mountain tea." The extreme altitude, cool temperatures, and persistent cloud cover slow the growth of the tea plant, concentrating amino acids and aromatic compounds in the leaves and producing one of the most refined, naturally sweet oolongs in the world.
The High-Mountain Difference
Altitude is not just a marketing distinction for Ali Shan — it fundamentally changes the chemistry of the leaf. The leaves are rolled into tight balls, which unfurl beautifully during brewing to reveal whole, intact leaves with vivid green centers and reddish edges.
