Use four to five minutes for Assam, Ceylon, or a breakfast blend that will take milk. Delicate Darjeeling often works better around 85 to 90°C for about three minutes. - Leaf amount. Four grams contains more available caffeine than two grams.

- Particle size. Broken leaf and tea-bag dust expose more surface area and extract quickly.
- Water temperature. Hotter water generally pulls caffeine faster.

Black tea contains less of those original catechins because processing transforms many of them into theaflavins, thearubigins, and related compounds. That makes their chemical profiles different. It does not make one cup healthy and the other empty.
Both provide polyphenols. Both are unsweetened, nearly calorie-free drinks when served plain. Both have been studied for cardiovascular and metabolic outcomes. Green tea has the larger research literature.
